Clemson Chicken

Holy Yum. In light of the National Championship game last night, I wanted to dig out my famous "Clemson Chicken" recipe! I was telling my husband last night if Clemson wins, we are having it for dinner tonight! I had a minor heart attack watching, and was rooting for Clemson because c'mon my mouth watering dish was on the line! Sure enough, it is in the oven now.. in all of its bubbling glory. Let's just say I am SO excited to eat dinner tonight. Not the healthiest of recipes, but one to pull out every now and then.

This recipe got its name when the college tennis team I was playing for travelled to play Clemson, and we were lucky enough to be housed by a generous southern family with a knack for southern comfort food! They served us this dish, and the whole tennis team was raving about it. I got the recipe, and re-named it to honor our trip and generous hosts!

Ingredients | Yields 2-4 Bake @ 350 degrees

  • 1 8 oz. container of Sour Cream

  • 1 10 oz-14.5 oz. can Cream of Chicken

  • 3-4 Chicken Breasts diced

  • 2 cups of Grated Cheese

  • 1 Sleeve Ritz Crackers Crushed

  • 1 Stick of Melted Butter

  • Poppyseeds for garnish (optional)

Instructions

1. Mix together the sour cream and the cream of chicken soup. Put half of this mixture in the bottom of a casserole dish.

2. Add the chicken as an even layer over the cream mixture, and spread the remaining cream mixture over the chicken. Cover it completely.

3. Put the 2 cups of grated cheese over the casserole, and lightly dust with the crushed Ritz crackers. Garnish with poppy seeds if you want.

4. Bake at 350 degrees until bubbly.

Enjoy! (Put some veggies with it to make it healthier)
